Melt the butter, add the sugar and mix well.Whip the egg whites until stiff. Stir in egg yolks,flour and potato flour mixed together,salt , egg whites, and lemon rind. You can also add some "grappa" or milk to soften the mixture.
Pour in a baking tin and bake for about 40' at 180°.
